If you’re trying to wrap your head around what Haslet actually is, the easiest comparison is probably a pork pie, though the preparation is quite different. Traditionally, it started as a way to use the "pluck" of the pig—the head, the liver, and the heart. All of that is mashed together with a generous helping of local sage, which grows abundantly around here. The mixture is formed into a sort of dough-like shape and then wrapped in an incredibly thin pastry crust.

In my search for the authentic stuff, one name kept popping up: Grasmere Farms. They run a series of farm shops throughout the county, so I tracked one down and stopped in. I’ll be honest, I was a little unsure if they’d actually have any in stock. Some of these traditional local foods are so specific that they can be surprisingly hard to find, even in the heart of the region where they originated.
